Baked Mackerel & Summer Evenings

Taking into consideration that we live on an island, we actually eat surprisingly little fish. Everyone in the family loves fish of all kinds, but somehow lamb, chicken, and wild game most often end up on our plates. But these days a good friend of my husband is having a lucky streak with mackerels, and we are lucky enough to get a "bite" of that :)

They are not quite as easy to de-bone as flat fish, which is my favourite to eat in the summer with fresh potatoes, but they are not too hard either. I cook them as simple as possible: rubbed with butter and olive oil, stuffed with parsley, drizzled with salt and pepper and lemon, and then pour some white wine in the bottom of the tray and cover it with tinfoil and bake it in the oven for about 45 minutes (the tin foil will prevent the fish going dry) at 150 C.

I will serve it with potatoes dug up in the garden that same afternoon, and a fresh salad of sliced beetroot i various colours mixed with balsamic vinegar, salt, pepper and honey. 

It is the perfect simple light meal to enjoy with a glas of white wine on warm summer evenings :)
